I have done zero work on this except think about it. I've only thought about it because one of my friends and one her friends is really into racing horses and genetics.
Basically all this would be is:
"Hey, wanna race?"
"Sure!"
"Wanna put some money down?"
"Alright, MajorDick to place."
Then they race on a track of Dirt, Mud, Grass, etc that had some kind of effect on how the horses run, i.e. one could love mud and one could hate mud. The one that loves mud would get a bonus of some kind on a stat.
One of them wins money and the other loses money.
And each horse gets a point to put into stats
Then they can go off and train the horse more
As for breeding, well it would go something like this:
"Hey, wanna make our horses ram into one another?"
"Sure!"
Then they each pick a horse and then BAM, foal.
That foal would get a mash of each horse's stats and what it looks like will be determined by genetics.
Oh, and it would have to have some kind of aging system so the horses die off and grow up. Plus some kind of system to sell off and buy horses.
